Quail on birch coals and melon with bacon: what else to try at the “Summer in the City” venues

Chefs of the gastronomic project “Summer in the city” reveal the secrets of cooking original and delicious dishes. Two fairgrounds will operate in the center of Moscow from August 5 through 8 — on Tverskaya Square and Revolution Square. The remaining 16 will be located in other districts of Moscow.

The citizens will be offered unusual desserts cooked according to original and old recipes and a special restaurant menu by over 50 trade and public catering enterprises.

At the fairs, not only dishes from different regions of Russia, but also from other countries — England, Belgium, Spain, Italy, Turkey, Japan can be tasted.

Crispy chicken and savoury pilaf

Saturday, August 7, at: Gorodetskaya Street, premises 1, Jerk chicken wings will be cooked from 16:00 to 19:00. The dish has a Jamaican flavour: it is spicy and sweet at the same time. First, the chicken stays in a special marinade for about a day, and then it is fried. The fire brings the seasoned meat to an ideal state in a matter of minutes. A crisp, spicy and dark crust is a sure sign of Jerk chicken wings. The chicken is removed from fire, cut into portions and served in craft paper. 

On the same day, from 15:00 to 17:00, one can witness the cooking of the best dish for a hot summer — pilaf with fruit (Matveevskaya Street, premises 2). It is made according to an unusual recipe, with dried apricots, apples, raisins, barberry, and prunes. Apple juice, honey with nuts are added at the very end. The pilaf gets crumbly, and the amber-colored rice is both sweet and spicy.

Delicious appetizer and quail in a spicy sauce

Patrons will be offered grilled pumpkin with smoked bacon at the boulevard in the 16th microdistrict of Kryukovo from 14:00 to 16:00 on August 7 and 8. First, the pumpkin is cut into slices. Next, oil, salt, and crushed garlic are mixed in a deep bowl, and the slices are rubbed on both sides. After that, the pumpkin is wrapped with strips of raw smoked bacon. The slices are finally fried on the grill.

Chefs will cook quail on birch coals with cherry sauce on August 7 from 15:00 to 18:00, in the Brigantina Park at Koptevsky Boulevard. Tender wildfowl and a smoky flavour are the perfect combination, and the signature sauce will add zest to the dish. Before cooking, the quail is dried with a towel and favorite spices are added. The sauce is based on cherry. First stage, the cherry is pureed. Honey and cinnamon, salt, pepper, sugar and spices are then added to taste. Next, the sauce is cooked to readiness in a saucepan. All that is left to do is to serve the quail and pour the sauce over it.

Seafood and mini burgers

Shrimps with pineapples and teriyaki sauce will be the dish of the day on August 6, from 19:00 to 21:00 and on August 8 from 14:00 to 18:00 atthe boulevard in the 16th microdistrict of Kryukovo. Shrimps and pineapples are fried on special fire bowls until golden brown, laid out on a pillow of rice, with home-made teriyaki sauce poured on top. The sauce is cooked as follows: soy sauce with sugar and honey is slow heated in a saucepan, then a little wine vinegar and garlic are added there. The mixture should be well mixed until thickened.

The same venue offers Asian style mini burgers with a crab and shrimp cutlet, sweet and sour sauce, and lemongrass seasoning, on August 8, from 14:00 to 18:00. A roll made of durum wheat is baked in the oven in advance. Cutlets are made of minced meat by a special recipe. It includes crab meat and peeled shrimps along with onions, cheddar cheese, eggs and breadcrumbs.

A roll is heated and a cutlet is fried on a fire bowl. Then a cutlet, tomatoes, cheese, finely chopped pineapples and bell peppers are placed in a roll, and sweet and sour sauce is added. It is prepared as follows: tomato puree, soy sauce, freshly squeezed orange juice, sugar, and vinegar are mixed in a saucepan over low heat, then a little flour pre-mixed with water and lemongrass seasoning is added. The mixture is brought to a boil. After that, the sauce gradually thickens while cooling.

Fried melon and pineapple stewed on fire

Fried melon in bacon will be cooked on August 7 from 15:00 to 17:00 at Revolution Square. A piece of melon is wrapped in the most tender bacon and placed on a heated pan. The melon simmers about three minutes until the bacon has a crisp, savoury crust.

Patrons can also enjoy pineapple in its own juice, stewed on fire, and wok fried rice with chicken. For the first dish, pineapple is put on a Brazilian skewer and heated on fire to gain juiciness. Next, the pineapple is completely laid out on the grill and simmers in its own juice until it is half ready. Then the pineapple is removed from fire and cut into rings, which are fried and caramelized.

To make rice with chicken, juicy vegetables and chicken are cut into thin strips and lightly fried, then cooked rice is added. Then the entire dish is fried to an appetizing golden color and fish and oyster sauces are added.

The tenderest pancakes and turkey with honey sauce

Special grill area will operate on August 7 and 8 from 15:00 to 18:00 at 11 Dmitriya Donskogo Boulevard. In addition to meat and fish dishes, there will be cooked pancakes with various berry fillings and nut paste. Such pancakes can be cooked in no time. First of all, you need to make classic dough, then pour it on the grill surface in small portions about 10 centimeters in diameter and fry on both sides until ready. When serving the pancakes, add nut paste with cocoa and fresh berries.

Turkey with apples, pears and prunes will be served with honey sauce on August 7 at Teply Stan Street, premises 1b. It will be accompanied with baked baby potatoes and fresh vegetables. Turkey stuffed with prunes through small sections, is marinated for several hours in soy-honey-garlic sauce, and filled with sliced apples and pears before baking. Orange slices covered with honey glaze are spread on top. Turkey is placed in the center of the cooking form and surrounded by sliced apples. The dish is baked in the oven for about an hour and a half.
